10-Minute Skillet Pizza with Yeast Dough
No oven, but craving pizza? This recipe has you covered! When the oven's out of commission — or you just can't be bothered to fire it up — you can make some of your favorite dishes right in a skillet. Pizza, for one. Yes, really! And it's so quick and easy that this is the only way I've made pizza for ages now.

- Make the dough by mixing the flour, yeast, water, and salt. It should be fairly firm, but not stiff. 2. Set the dough in a warm spot to rise; meanwhile, wash the tomatoes and slice them into thin rounds. 3. Grate the cheese. 4. Thin the tomato paste with a little water. 5. Once the dough has doubled in size (which happens pretty quickly), divide it into pieces. I usually make 5-6: rolled out, each piece forms a round the size of the skillet I cook the pizzas in. 6. Heat the skillet, turn the heat down to low, and add the olive oil. 7. Lay a round of dough in the skillet and cook it for about a minute and a half per side. 8. Spread the round with tomato paste and sprinkle on some of the herbs (remember, you'll get 5 or even 6 pizzas). 9. Arrange the tomato slices on top. 10. Scatter the grated cheese over the pizza. 11. Cook for another 2-3 minutes, then serve right away. Enjoy!
