Onion rings in batter

A tasty, crispy snack that also makes a nice garnish for other dishes. Just be sure to serve them right after frying — if they sit around, they turn soggy and lose their appeal.

  • Slice the onions into rings at least ¼ inch (0.5 cm) thick. For the batter, separate the egg whites from the yolks and whip the whites until foamy. Gradually beat in the yolks, salt, mayonnaise, and flour until the batter is smooth. Heat the oil until it just starts to bubble. Dip the onion rings in the batter and lower them into the hot oil. Once they turn golden, they're done. If you like, sprinkle them with grated cheese while they're still hot so it melts a little.
