  • Trim the membranes from the liver, pat it dry, and set aside. Peel the onion and slice it into half-rings. Chop the cilantro. Heat a wok or skillet with the oil over the highest heat. Drop the spices into the hot oil for a few seconds to release their aroma, then immediately add the onion, stirring quickly and sprinkling with the sugar. Cook, stirring, for 2–3 minutes. Add the liver and fry, stirring, for 3 minutes. Then pour in the soy sauce and cook for another 2–3 minutes. Turn off the heat, sprinkle with the chopped cilantro, and let the dish rest for a couple of minutes. By the way, this liver goes with just about any side dish. Enjoy!
