Pearl barley with false morels
A delicious, very nourishing dish made with prized spring mushrooms. False morels, like true morels, only appear in spring — the earliest ones right at the start of April. These mushrooms are considered semi-poisonous and are actually dangerous raw, so we always boil them several times, changing the water each time. It's also a good idea to soak them for at least 15 minutes so any insects hiding inside the wrinkled caps crawl out.

- For this dish, soak the pearl barley overnight. The mushrooms also need prepping: wash them thoroughly, check for insects, cut them into large pieces, and boil for 40 minutes, then drain, rinse under running water, and squeeze well. Don't skip this step — false morels can't be eaten without it. Drain the soaking liquid from the barley too, then rinse the grains and let them dry a little. Now for the dish itself: 1. Peel the onion and chop it into medium pieces. 2. Cut the washed and dried celery into small pieces. 3. Sauté the prepared vegetables in a well-heated skillet with the vegetable oil. 4. Add the mushrooms and keep cooking everything together, stirring, for 7–10 minutes. 5. Add the barley, butter, spices, and salt. Mix well. 6. Transfer everything to a baking dish and pour in enough hot water to cover it all — the water should sit about ½ inch (1.5 cm) above the grain. 7. Cover the dish with foil and bake in an oven preheated to 375°F (190°C) for 40 minutes, until the barley is tender. Turn off the heat and leave the dish in the cooling oven for another 25 minutes. Then serve with fresh vegetables and herbs and your favorite sauce. Enjoy!
