Lean cutlets with psyllium

These cutlets are incredibly tasty and delicious. Their composition is rich in useful substances, because they are also very nutritious.

One of the ingredients of this dish is psyllium. And to put it simply, the flour from the bran of medicinal plantain, which consists of almost 2/3 of soluble fiber. This product is successfully used in a gluten-free diet, and will also be useful to everyone who cares about their health.

We begin cooking cutlets with psyllium with the preparation of lentils: put it in a saucepan, pour water and bring to a boil. Reduce the heat and cook for 15 minutes, after which we drain the water.

Next, we proceed to the preparation of "minced meat" for cutlets. To do this, we transfer the boiled and strained lentils to a deep bowl and whisk with an immersion blender. Add the remaining ingredients to the bowl, except vegetable oil, and continue to beat. The mass should be plastic and quite dense. If your "minced meat" is liquid, then you have badly strained the lentils. This flaw can be eliminated by adding a little more flour or putting it in the refrigerator for 15-20 minutes.

Now we turn to frying cutlets:

1. Preheat the frying pan (preferably with a non-stick coating), pour a small amount of vegetable oil on it.
2. We form small cutlets and immediately put them on a preheated frying pan.
3. Fry the cutlets for 2-3 minutes on each side. If you do not want to fry all the cutlets at once, you can cover the bowl with a film and store the finished "minced meat" in the refrigerator for 3-4 days.

Serve ready-made psyllium cutlets hot or cold with your favorite sauce or vegetable salad.
