Accordion Pork Roast Baked in the Oven

The most festive roast there is! Beautiful, delicious, and easy! Meat baked "accordion" style is a winning centerpiece for any celebration. You can tuck all sorts of fillings between the slices, and it works with just about any meat — from chicken and turkey to pork and veal.

Cooking method

    Peel and finely chop the garlic.

    Put the garlic in a bowl for marinating the meat, then add the soy sauce, oil, and mustard.

    Add the lemon juice to the marinade.

    Stir the marinade until smooth.

    Score the meat (a rectangular piece works especially well here) crosswise along its full length, cutting almost all the way down but leaving about 5–10 mm (1/4 inch) uncut at the bottom so the slices stay connected.

    Dunk the meat thoroughly in the marinade and let it marinate.

    Cut the cheese, tomatoes, and mushrooms into slices.

    Lay the marinated meat on a sheet of foil.

    Tuck the vegetable slices evenly into the cuts.

    The mushrooms are optional. You can also sauté them before baking — I actually prefer them that way. Wrap the prepared pork snugly in the foil and bake in an oven preheated to 400°F (200°C) for 1 hour.

    Let the finished roast rest for 10–15 minutes, then slice and serve.
