Birch Grove Layered Salad with Prunes

A delicious layered salad that looks like a work of art! Give it a try. I love layered salads and collect recipes for them, and the prunes here add a refined little touch. Trust me — it's a keeper!

    1. Peel the onion and cut it into medium pieces. 2. Slice the mushrooms or cut them into quarters. 3. Heat the vegetable oil in a skillet and sauté the onion for a few minutes. 4. Add the mushrooms and cook them with the onion until done (about 10 minutes), seasoning with a little salt. Set aside to cool. 5. Meanwhile, dice the chicken breast you cooked ahead of time. 6. Wash the fresh cucumbers well, peel them, and cut into small dice too. 7. Cut the prunes into small pieces, setting one aside to garnish the salad. 8. Separate the hard-boiled eggs into whites and yolks. Set the yolks aside and grate the whites on the fine side of a box grater. 9. Assemble the salad layer by layer: chicken breast, a coat of mayonnaise, prunes, then mushrooms, another thin layer of mayonnaise, half of the grated egg whites, then the cucumbers coated with mayonnaise, and finally the grated yolks on top. 10. Press the remaining grated egg whites onto the sides of the salad. 11. Decorate it: pipe birch trunks with mayonnaise, add dark speckles with bits of prune, use the green onions for grass and leaves, and set halved pickled mushrooms at the base of the "trees." Chill the salad in the fridge for about an hour before serving. Enjoy, and happy celebrating!
