Foil-Grilled Corn on the Cob

A fantastic dish to cook outdoors — get creative with it! After trying this deliciousness once at a friend's place in the country, I now make it myself every chance I get, or ask my husband to grill it! Everyone in our family is crazy about foil-grilled corn.

  • First, get the coals going in the grill. You'll need enough coals to bury all three ears — better too many than too few! While the coals heat up, stir the oil together with the lime juice and salt. Use an aromatic oil like olive or sesame — it gives the corn a nice kick. Brush each ear well with the oil mixture and wrap it in foil. You can wrap each ear separately or all of them together. Set the foil-wrapped corn on the hot coals and pile a layer of coals over the top. Cook for about 30 minutes. Keep in mind that young, tender corn cooks faster than firm, mature ears! Sprinkle the finished corn with chopped parsley and serve hot. Enjoy — it's really tasty!
