Zucchini Roll-Up Appetizer ("Mother-in-Law's Tongue")
Delightful zucchini "tongues" with a zesty filling! You can make the rolls spicy or milder — it all comes down to your taste. They're great as an appetizer at a party with friends :). The rolls come together very quickly, easy enough even for a beginner.
Cooking method

Step 1:
Take one or two zucchini, depending on their size. Slice them lengthwise into thin planks — I got nine. Put them in a colander, sprinkle with salt, and let them sit a while to draw out the moisture.

Wash the tomatoes and cut them into thin slices — one for each zucchini plank.

Step 3:
You can use any cheese, but a softer one is better since it melts more easily. Slice it.

Chop whatever fresh herbs you like (dill, parsley, cilantro).

Press the garlic cloves into the mayonnaise — use as much as you like. Mix well and stir in the ground red pepper.

Pat the zucchini planks dry with a paper towel and dredge them in flour, shaking off the excess.

Whisk the eggs, adding a little salt and pepper if you like, and dip the planks in them. Then dredge again in flour or breadcrumbs. I skipped this step and regretted it — the crust didn't come out as crisp.

Step 8:
Heat a skillet with the vegetable oil and fry the zucchini over high heat on both sides until golden and crisp. Remove and set on a paper towel to blot off excess oil.

Step 9:
Spread garlic mayonnaise over the entire surface of each zucchini plank.

Sprinkle with herbs. At one end, leaving a small margin, place a tomato slice; at the other, a piece of cheese. Roll it up, starting from the tomato end. Secure with toothpicks.

Set the rolls in the warm skillet with the leftover oil and keep them covered until the cheese melts.

The appetizer is ready. You can enjoy it hot or cold — it's just as good either way. Spicy zucchini rolls are a flavor explosion!
