Step 1:
Take one or two zucchini, depending on the size. Cut lengthwise into thin plates. I got nine of them. Put in a colander, sprinkle with salt and leave for a while to stand out the juice.
Step 2:
Wash tomatoes, cut into thin slices according to the number of zucchini plates.
Step 3:
You can take any cheese, but it's better to be softer so that it melts easier. Cut.
Step 4:
Any greens to taste (dill, parsley, cilantro) are cut accordingly.
Step 5:
Squeeze garlic cloves into mayonnaise. Its quantity depends on your taste and desire. Mix thoroughly, add ground red pepper.
Step 6:
Zucchini plates dry with a paper towel and roll in flour. Shake off excess flour.
Step 7:
Beat the eggs with a whisk, add a little salt and pepper if desired. Roll in flour or breadcrumbs again. I didn't do it, but in vain - not enough crispy crust was formed during frying.
Step 8:
Preheat a frying pan with vegetable oil, fry the zucchini on high heat on both sides until a crisp brown crust forms. Remove and place on a towel to remove excess fat.
Step 9:
Apply garlic mayonnaise all over the zucchini.
Step 10:
Sprinkle with herbs. From one edge, slightly retreating, lay a slice of tomato, from the other - a piece of cheese. Roll up the roll, starting from the side of the tomato. Fasten with toothpicks.
Step 11:
Put in a warm frying pan on the remaining oil and stand under the lid until the cheese melts.
Step 12:
The snack is ready. You can eat it both hot and cold - it will be no worse. Spicy zucchini rolls are an explosion of taste!
