Pancakes with Warm Milk

A very quick recipe for incredibly tasty pancakes! Makes 5 large, thin pancakes. My 4-year-old grandson loves these and always asks me to make them. If you want to fill them, cut the sugar in half. They come out remarkably tender and delicious. Because melted butter goes right into the batter, the pancakes have a rich, buttery flavor and don't need to be brushed with butter after cooking.

  • Beat the egg with the sugar, then add half of the warm milk and keep whisking (a fork works better here than a mixer). Add the salt (a pinch), baking soda (a knife-tip's worth), flour (heaping spoonfuls), and oil (I use olive oil). Whisk everything well so there are no lumps. Last, add the remaining warm milk and the melted butter (you can melt it in the microwave), and stir once more — the batter should be thin.
  • Cook the pancakes on a dry, hot skillet, greasing it only before the first pancake (though with a Tefal-style nonstick pan, you may not even need that). Cover the finished pancakes with a clean towel so they stay tender, soft, and don't dry out.
