Classic Pan-Fried Syrniki (Cottage Cheese Cakes)

Cooking method

    Press the cottage cheese through a sieve. Add the eggs and 3 tablespoons of sugar (the other 3 tablespoons go into the sour cream topping). If you like your syrniki very sweet, add 1–2 tablespoons more sugar.

    Add the semolina and mix very well. I like to mix this by hand, but you can use a mixer on low speed if you prefer.

    Now let the mixture rest for 15–20 minutes, so the semolina absorbs the liquid and the batter firms up.

    Put some flour on a plate and shape a syrnik with damp hands. I recommend wetting your palms each time as you form them — the mixture won't stick as much, and you'll use less flour for coating.

    And now, the secret to perfectly round syrniki. Set each shaped cake on the board and cover it with a glass or cup of a slightly larger diameter...

    ...then gently rotate the glass without lifting it off the surface. Just a few turns.

    As a result, the syrnik rises up, rounds out, and comes out neat and even.

    Do the same with all the cakes.

    Heat the vegetable oil in a skillet and fry the syrniki.

    Gently flip them to the other side and cook through.

    Here are the fried syrniki. Preheat the oven to 350°F (180°C).

    Take a baking dish and arrange the syrniki in it. I overlapped them in a circle.

    In a bowl, mix the sour cream with 3 tablespoons of sugar. Whisk lightly until the sugar dissolves.
