Classic Pan-Fried Syrniki (Cottage Cheese Cakes)
The most tender, fragrant cottage cheese cakes — they just melt in your mouth! Plenty of people love syrniki (cottage cheese cakes): they're filling, wholesome, and delicious. But what if you cook them with a sour cream topping and finish them in the oven? The flavor is superb. The cakes turn out remarkably tender, and the sour cream topping bakes into a fragrant cream... Shall we get started?
Cooking method
-
Step 1:
Gather your ingredients.
-
Step 2:
Press the cottage cheese through a sieve. Add the eggs and 3 tablespoons of sugar (the other 3 tablespoons go into the sour cream topping). If you like your syrniki very sweet, add 1–2 tablespoons more sugar.
-
Step 3:
Add the semolina and mix very well. I like to mix this by hand, but you can use a mixer on low speed if you prefer.
-
Step 4:
Now let the mixture rest for 15–20 minutes, so the semolina absorbs the liquid and the batter firms up.
-
Step 5:
Put some flour on a plate and shape a syrnik with damp hands. I recommend wetting your palms each time as you form them — the mixture won't stick as much, and you'll use less flour for coating.
-
Step 6:
And now, the secret to perfectly round syrniki. Set each shaped cake on the board and cover it with a glass or cup of a slightly larger diameter...
-
Step 7:
...then gently rotate the glass without lifting it off the surface. Just a few turns.
-
Step 8:
As a result, the syrnik rises up, rounds out, and comes out neat and even.
-
Step 9:
Do the same with all the cakes.
-
Step 10:
Heat the vegetable oil in a skillet and fry the syrniki.
-
Step 11:
Gently flip them to the other side and cook through.
-
Step 12:
Here are the fried syrniki. Preheat the oven to 350°F (180°C).
-
Step 13:
Take a baking dish and arrange the syrniki in it. I overlapped them in a circle.
-
Step 14:
In a bowl, mix the sour cream with 3 tablespoons of sugar. Whisk lightly until the sugar dissolves.
-
Step 15:
Pour the sour cream topping over the syrniki and put them in the preheated oven for 20 minutes.
-
Step 16:
Twenty minutes later, the delicious dessert is ready!
-
Step 17:
They're wonderfully soft, tender, and fragrant. The sour cream topping gives the dish an extra note of richness.
-
Step 18:
Enjoy!
