Step 1:
How do you make "Sunshine" chicken fritters? In a bowl, whisk the eggs, then stir in the mayonnaise and flour to make a batter about the consistency of thick sour cream. Add the grated cheese, season with salt and pepper, and mix everything well.

Step 2:
Cut the chicken breast into small pieces.
-
Step 3:
Stir the chicken into the batter until evenly combined.

Our fritters are ready! Enjoy!
- It's better to make the mayonnaise yourself — it'll be tastier and better for you. You can also use sour cream or plain yogurt as the binder instead of mayonnaise, either on their own or mixed with mayonnaise in whatever ratio you like; that will cut the calories.
- Any oil is only good up to a certain temperature — its smoke point, where it starts to burn and form harmful compounds, including carcinogens. Choose an oil with a high smoke point for frying, and avoid heating delicate oils.
- Important! The wrong pan can ruin even the best recipe, so pick a skillet suited to what you're cooking.
