    Mix the ground meat with an onion pureed in the blender, plus salt and pepper to taste. Work in one raw egg. Divide the mixture into 4 equal portions.

    Crack one egg into a bowl and beat it lightly. Pour it onto a completely flat plate.

    Roll one portion of the meat out thinly on a floured board, making it about the diameter of the skillet you'll cook the brizol in. Tip: you can also roll the meat out between two sheets of plastic wrap—it won't stick to the rolling pin and it's easier to transfer to the plate.

    Add a couple of tablespoons of vegetable oil to the skillet. Transfer the meat round onto the plate with the egg, laying it gently on top. Then carefully slide everything off the plate into the hot skillet so the egg ends up on the bottom and the meat on top.

    Once the egg side is browned, flip the brizol and cook until done.
