Step 1:
Products for cooking minced meat chops in batter. It is better to make the stuffing yourself, so you will be sure of its quality. The main thing is that it should not be liquid. In addition, so that when frying minced meat, in which even an egg is not added, does not disintegrate, take fresh, not frozen. It is better to take pork or pork-beef, then the chops will turn out more juicy and tender. Flour must be pre-sifted. Garlic - peel and wash.
Step 2:
Salt and pepper the minced meat, you can add a little spices for the meat. Onions, eggs, garlic and all the other ingredients that are usually put in cutlets should not be added to minced meat, since you will not taste chops, but simple cutlets. Mix the minced meat to a homogeneous consistency and beat it on the work surface to knock out air bubbles.
Step 3:
Divide the minced meat into portions. Then we make tortillas from them, roll them on both sides in flour. The thickness of the tortillas is preferably at least 5 mm.
Step 4:
Proceed to the preparation of the batter. We drive eggs into a deep plate or bowl, shake them thoroughly with a fork, squeeze garlic through a press.
Step 5:
Add a little salt, pepper, pour most of the flour, mix thoroughly so that there are no lumps. The batter should be homogeneous and resemble thick sour cream in consistency. If there is not enough flour, add it.
Step 6:
Dip each chop into the batter so that the batter covers it on both sides and along the edges. While we are doing this, we put a frying pan on the fire, heat it, warm up the vegetable oil and spread the first batch of chops.
Step 7:
Fry on both sides until golden brown. During the frying of the chop on the reverse side, we close the pan with a lid so that our minced chops are steamed a little. We remove the ready-made chops to the dish. We put the next batch of chops and fry in the same way. Spread on a platter, cool, serve minced meat chops warm or cold. Bon appetit!
To make minced meat chops in batter more juicy, they can be put out after frying in a deep frying pan, with the addition of a small amount of water.
