    How do you make a carrot salad with raisins and sour cream? Gather the ingredients. If you like, you can replace the sour cream with unsweetened yogurt to make the salad lower in calories. Or, conversely, with condensed milk, which kids love - in that case don't add honey, or it'll be too sweet. People with allergies should also skip the honey. You can add a little sugar instead of honey, but it'll be sweet even without it thanks to the raisins.

    Rinse the raisins, changing the water several times, then pour boiling water over them and leave for 5 minutes to plump up. Drain the water and pat the raisins dry with a paper towel.

    It's better to use fresh, juicy carrots - they're tastier and have more vitamins. Wash the carrot and peel it (if it's straight from the garden, you don't have to peel it; just scrub it with a stiff brush to remove dirt, since most of the vitamins are in the skin). Grate the carrot on a medium grater.

    Finely chop the walnuts with a knife (rinse and dry them first if they came pre-shelled), or chop them another convenient way. Don't grind them to dust - the nuts should be noticeable in this salad.

    Add the walnuts, honey, and sour cream too. You can use sour cream of any fat content, but it's better to use thick sour cream so it doesn't run in the salad. Mix.

    The salad is ready. Transfer it to a serving dish or serve it in the salad bowl, sprinkle chopped walnuts on top, and garnish with a sprig of fresh parsley. You can chill the salad a bit first - it'll be juicier and more pleasant to eat. Enjoy!
