Jerusalem Artichoke Veggie Fritters
Light, tasty fritters that everyone at home will appreciate!
Cooking method

Step 1:
Prep the ingredients. You don't have to peel the Jerusalem artichokes—just scrub them well under running water and trim off any knobby bits. Peel the potato and onion; if the zucchini is young, you can leave it unpeeled.

Step 2:
Grate the potato, Jerusalem artichoke, zucchini, and onion on the medium holes of a box grater. To save time, I use a food processor.

Step 3:
Add the minced garlic clove and chopped herbs to the grated vegetables.

Step 4:
If you like, add a handful of grated cheese (I love cheese, so I always add it).

Step 5:
Add the 2 eggs, salt, and pepper. Mix well.

Step 6:
Add 2–3 tablespoons of flour (adjust to the batter's consistency), mix, and you're ready to fry.

Step 7:
Fry the fritters in vegetable oil for a few minutes per side until cooked through.

Step 8:
Serve hot with sour cream or your favorite sauce. Enjoy!
