Shrimp Salad with Cheesy Omelet

No one can resist this vibrant party salad! It's tasty and light, yet the omelet makes it satisfying, too. If you prefer, you can just dress it with plain mayonnaise. The amounts make 1 large or 2 medium servings. Enjoy!

    First, make the dressing: whisk together the olive oil, lemon juice, and mustard, then season with salt and pepper to taste. The dressing is ready.

    For the omelet, mix the egg, milk, grated cheese, finely chopped herbs, salt, and pepper. Stir and fry one thin omelet crepe in vegetable oil.
