Cooking method
-
Step 1:
The ingredients.
-
Step 2:
Sift the flour, baking powder, and salt into a bowl.
-
Step 3:
Add the eggs one at a time along with some of the milk, stir until smooth, then pour in the rest of the milk.
-
Step 4:
Add the cocoa powder and vegetable oil to the batter.
-
Step 5:
Mix the batter until the cocoa is fully dissolved. Let it rest for 15–20 minutes.
-
Step 6:
Pour the batter onto a hot, lightly oiled skillet and cook the crêpes; flip and cook the second side for just 1–2 seconds.
-
Step 7:
While the batter rests, make the filling: thoroughly blend the cottage cheese, sour cream, sugar, and a pinch of vanilla.
-
Step 8:
A hand mixer works nicely for the filling.
-
Step 9:
Fold the raisins (and walnuts if you have them) into the cheese mixture, stirring with a spoon only.
-
Step 10:
Spoon a portion of filling onto the edge of a crêpe and roll it up.
-
Step 11:
Make "ribbons" — thin rings of dried apricot and orange peel.
-
Step 12:
Tie each crêpe up like a little bow.
-
Step 13:
Finish with a drizzle of melted chocolate and sour cream, if you like.
-
Step 14:
Treat the one you love to crêpes made by your own hands!
