Spanish-Inspired Cherry and Jamón Salad
Bright, vivid, unforgettable memories of Spain! I brought some jamón back from Madrid and, naturally, couldn't resist playing around with this cured-meat delicacy.
Jamón is Spanish dry-cured ham — a national treasure and a point of pride for the country.
It's a cornerstone of Iberian cooking, and the word simply means "ham" in Spanish. The pork leg is salted, dried, and aged under carefully controlled conditions, resulting in one of the finest and most famous cured meats in the world. Jamón contains almost no cholesterol and is Spain's most widely eaten meat product.
Cooking method

Step 1:
Toss the asparagus with olive oil and grill it briefly, just 1–2 minutes, so it stays al dente and crisp rather than soft. Pit the cherries.

Cut the tomato however you like, and slice the jamón into paper-thin, translucent slices.

Arrange all the ingredients on a plate and drizzle with the dressing.
