Julia Child's Crêpes
Absolutely wonderful crêpes — you'll love them from the very first bite! Ever since I got my hands on a book of Julia Child's culinary wisdom, I've grown more and more interested in French cooking, and I made these crêpes from her recipe. They came out perfectly on the first try — no "first-pancake-always-flops" here! Since then I make them only this way, and I wanted to share the recipe with you. They turn out very thin, pliable, and of course delicious!
Cooking method

Step 1:
Put the butter in a skillet, set it on the stove, and melt it over the lowest heat.

Meanwhile, in a large bowl, beat the eggs with the salt, add the milk and water, and mix well.

Add the sifted flour and the melted butter and whisk until smooth. Chill in the fridge for half an hour.

Step 4:
Heat a skillet and grease it with just a touch of oil. Pour in 3 tablespoons of batter, tilting the pan in every direction so the bottom is coated in an even layer.

Step 5:
Cook for about 1 minute, until the underside is golden. Flip and quickly brown the other side.

Step 6:
Serve the crêpes with any filling or sauce you like.
