Raspberry Syrniki (Cottage Cheese Pancakes)

Golden, tempting syrniki filled with fresh raspberries — a joy to make! Ever since I was a kid, I remember my mom treating us to raspberry syrniki on summer mornings when the berries were ripe. I decided to spoil myself with them again and share the recipe with you. They're not hard to make, and the payoff is pure pleasure. Enjoy!

  • Press the cottage cheese through a sieve, or use whatever method you like — I ran mine through a blender. Add the semolina, sugar, vanillin, and egg, then knead into a smooth curd dough. Prepare the fresh raspberries (pick them over and rinse in cold water). Dust your work surface with flour and roll the curd dough into a log. Slice it into rounds and pat each one into a small disk. Set a raspberry on each disk and roll it into a ball. Shape the balls into syrniki with a knife and fry in hot vegetable oil until done. Serve with sour cream or raspberry syrup.
