  • Bring the water to a boil, add the sugar, salt, butter, and vegetable oil, and stir. Take the pot off the heat and, adding the flour a little at a time, quickly stir the dough with a wooden spoon; keep adding flour as long as you can stir it in. Once the dough has cooled a bit, add the eggs one at a time, stirring vigorously. Mix the yeast into the remaining flour and add that to the dough. Knead well, adding more flour as needed — you'll use a little more or less than 2 kg (about 4.5 lb) depending on the flour's moisture and the size of the eggs. Set the dough in a warm place to rise. Once it has doubled, punch it down and let it rise again. While it rises, make the filling: finely chop the mushrooms and saute them with finely chopped onion. Grind the pork together with the onion-mushroom mixture and the herbs in a blender, then season with salt and pepper and stir in 100 ml (about 1/3 cup plus 1 tbsp) cold water. Divide the dough into equal pieces, roll each into a ball, and flatten it into a round. Spoon filling into the center, spreading it to within about 3/4 inch (2 cm) of the edge. Set a small pat of butter on the filling, seal the belyash closed, brush it with beaten egg, and bake in a preheated 350°F (180°C) oven for 20-25 minutes.
