Lavash Pumpkin Chebureki

Excellent chebureki with a zesty, savory kick! These come together fast — spicy pumpkin "chebureki" made from lavash. I think even people who don't usually go for pumpkin will love them. Of course, you can use any filling you like.

  • Grate the pumpkin. Sauté the onion in a little vegetable oil. Add the grated pumpkin to the onion, season with salt and pepper, and cook until tender. Stir in the minced garlic. Cut circles out of the lavash (a saucer works well as a guide). Spoon the pumpkin filling onto the circles, brush the edges of the lavash with water, and press the edges together to seal. Pan-fry the pumpkin chebureki in a little vegetable oil.
