Rinse the ribs in cold water, separate the vertebrae from the ribs.
Clean the ends of the ribs from the side that is located further from the spine, then roll them so that such a crown comes out. The ends of the ribs, free of meat, will be directed upwards, creating the crown itself.
If the crown of ribs is difficult to roll, then make small incisions at the bottom of the meat.
Sew the crown, rub it with a mass whipped in a blender: 3 tablespoons of olive oil, 4 cloves of garlic, 2 teaspoons of dry rosemary, 3 tablespoons of mustard, salt and pepper - to taste.
Connect the ends of the ribs with toothpicks.
From above, the crown should be pulled off with kitchen twine.
Cover it with foil and put it in the refrigerator overnight.
Remove before frying for an hour, let stand at normal temperature.
Grease the baking dish with vegetable oil, put the crown in it, wrap the ribs with foil.
Put the filling inside the crown and cover with foil.
Bake for 10 minutes at 230 degrees.
After reduce the heat to 165 and bake for 2.5 hours.
After 2 hours, remove the foil, sprinkle the filling with grated cheese and send it to the oven until ready.
Remove the crown, leave for 15 minutes, put it on a dish, remove the threads, decorate everything beautifully with cherry tomatoes and herbs.
