  • Rinse the ribs in cold water and separate the backbone from the ribs. Trim the meat off the ends of the ribs (the ends farthest from the spine), then curl the racks around so they form a crown. The cleaned rib ends point upward to create the "crown" itself. If the rack is hard to bend into a ring, make a few small cuts along the bottom of the meat. Stitch the crown together and rub it all over with a blender-whipped paste: 3 tbsp olive oil, 4 cloves garlic, 2 tsp dried rosemary, 3 tbsp mustard, and salt and pepper to taste. Pin the ends of the ribs together with toothpicks, then cinch the crown with kitchen twine. Cover it with foil and refrigerate overnight. Take it out an hour before roasting and let it come to room temperature. Grease a roasting dish with vegetable oil, set the crown in it, and wrap the rib tips in foil. Spoon the filling into the center of the crown and cover with foil. Roast for 10 minutes at 450°F (230°C), then lower the heat to 325°F (165°C) and roast for 2.5 hours. After 2 hours, remove the foil, sprinkle the filling with grated cheese, and return it to the oven until done. Take the crown out, let it rest for about 15 minutes, transfer it to a platter, remove the twine, and garnish nicely with cherry tomatoes and fresh herbs.
