Cooking method
- Make a sponge-and-dough yeast dough (I mixed mine in a bread machine). Run the meat through a meat grinder, and don't be shy with the fresh herbs. Turn the dough out onto a floured surface, cover it with a bowl, and let it rise once more. Then divide the dough into pieces. Roll out each piece, keeping the edges thinner than the center. Place the meat filling on the round, seal it into a bun, set it on a baking sheet, and let it rest; brush with egg and bake. Four buns fit on my baking sheet. The buns are done once the dough is golden and the fat in the filling is bubbling and clear — about 20–25 minutes. Transfer the belyashi to a plate, brush the tops with butter, and cover with a napkin, paper, or towel for a few minutes so the crust softens. Delicious — and the more fresh herbs, the better.
