  • Cornmeal flatbreads are an acquired taste, I'll be honest — they really only appeal to people who don't mind cornmeal to begin with. I'll just add that cornmeal is very good for you, and that 90 percent of people who live to a great age eat cornmeal flatbreads. Here's a recipe for one version of them. I'm not certain, but I believe it's Georgian. Mix the baking powder into the cornmeal, add salt, and pour in the kefir, stirring the whole time so no lumps form. Add the zest of one lemon. Now set a wide skillet on the stove and pour in enough oil to cover the bottom and rise about an inch above it. Shape the dough into flatbreads in whatever form you like and fry them in the oil on both sides until golden. You can also bake these in the oven. They go well with soups and main dishes — basically, you can use them in place of bread to round out a meal. They're also nice with a cup of tea.
