  • This street food goes by plenty of names, but you probably know it as shawarma — its Arabic name is "shawarma" and its Turkish name is "doner kebab." Traditionally it takes special equipment to make, and since not every kitchen has a vertical rotisserie, here's a recipe that captures the flavor of real doner kebab without any special gear. Slice the lamb as you would for thin steaks and pound it out until it's in thin sheets. Coat it with the olive oil and yogurt (or milk), sprinkle on the spices, and let it marinate for about two hours. Blend the onion to a purée and mix it into the ground meat. Add the tomato paste, salt, pepper, and spices, and stir until well combined. Take a tall, straight-sided loaf pan and line it with plastic wrap, then start layering the meat: first a few sheets of the lamb, then a thin layer of the ground-meat mixture, then lamb again — and so on until you run out of ingredients. The bottom and top layers should both be lamb. Wrap the whole thing tightly in the plastic, press it down firmly, and freeze it for about a day. Heat a little oil in a skillet (as you would for pancakes), slice thin pieces off the partly thawed loaf, and fry them. Serve with vegetables — you can stuff the meat into a pita or wrap it in lavash.
