Cooking method
- Rinse the chicken breasts and cut a "pocket" into each one, taking care not to slice all the way through. Season the pockets with salt and pepper, inside and out. Press the garlic and stir it into the mayonnaise, then brush the inside of each pocket with the garlic-mayo mixture. This is a dish I picked up recently — chicken breast with pineapple. It's really tasty and filling, and best of all it works for both a weeknight family dinner and a festive spread. Here's how it's done. Start with the filling: drain a can of pineapple and cut it into small cubes, then grate the cheese on the coarse side of a box grater. Stir the cheese and pineapple together with the mayonnaise. Stuff each pocketed breast with the filling and pin the opening shut with a toothpick. Beat the egg with a little salt in one dish, and put the breadcrumbs in another. Dip each breast first in the egg, then in the breadcrumbs, and fry in oil in a skillet until cooked through. Repeat with the rest, then serve them all up on a platter. Enjoy!
