Party Canapés

A little wonder of a recipe for special occasions — tasty, original, and lightning-fast! Nothing saves the day quite like these. Canapés sound impressive, and the beauty is that everyone throws them together quickly in their own way — it all comes down to whatever you happen to have in the fridge. So what exactly is a canapé? Think of it as a bite-sized stand-in for a sandwich: little morsels about 1½ inches across, built from carefully chosen ingredients. The base is usually a small toasted crouton of bread. When I make canapés with sausage, I sometimes use cocktail picks to thread bits of different ingredients together.
