Mushroom-Stuffed Crêpes
Just like Mom used to make! A simple recipe for wonderful crêpes — the kids will love them! For these mushroom crêpes you'll need about 1 pound of any mushrooms (chanterelles, porcini, birch boletes, or aspen boletes).

Cooking method
- Clean the mushrooms, rinse them well, and chop them very finely. Add 2–3 drops of sunflower oil to a skillet, set it over the heat, and once it's hot add the chopped mushrooms; sauté them briefly and season with salt. When the mushrooms start to release their liquid, let them cook in their own juices until all the liquid has evaporated and they turn drier. In a deep bowl, whisk the eggs, then add the milk and salt. Gradually whisk in the sifted flour so no lumps form. Add a little oil to a skillet and set it over high heat. Once it's hot, cook the crêpes, browning them on both sides. Grease the pan with oil every 3–4 crêpes — a chunk of peeled potato speared on a fork works nicely for this. Meanwhile, peel, rinse, and finely chop the onion. Add the mushrooms to the onion, stir, and fry briefly, salting if needed. Fill each crêpe with the mushroom mixture and fold it into a square envelope. Serve these delicious crêpes with sour cream. Your mushroom-stuffed crêpes are ready!
