Thick Milk Pancakes
Thick, hearty pancakes you're bound to love! I adore milk pancakes — all kinds, but especially thick ones. One day my 13-year-old daughter was experimenting with the batter and added so much flour it was practically fritter dough. She improvised, splashed in a little more milk, and went ahead and cooked the pancakes. They came out so thick we worried they wouldn't taste good — but she saved the day again: she whipped up a sauce from sour cream and sugar, simmered the pancakes in it, and we couldn't stop praising her creation. Sadly, this brand-new recipe never got written down, so I'll try to reconstruct it from memory.

- Here's how to make thick pancakes! Crack the eggs into a bowl and beat them with salt and sugar until foamy. Add the salt, sugar, vanilla sugar, and baking soda, and stir it all together. Add the flour gradually, in small additions, watching that the batter stays about the consistency of good, thick sour cream. Don't worry if it seems too thick — it'll still taste great! I like to fold a little tart apple, grated on the coarsest holes, into these pancakes. Now heat a heavy-bottomed skillet. You can add butter, in a pat or melted, or just stir a little vegetable oil into the batter and grease the pan lightly. Ladle in the batter, gently spreading it across the whole surface. Fry the thick pancakes on both sides until golden. Oh, are they good! Serve them with sour cream or jam — really, any jam or sauce works beautifully.
