Pancakes with a sweet touch are a real treat for the kids! What comes to mind when you hear "apple pancakes"? Probably something elaborate and stuffed — but no, with my recipe there's nothing to stuff, it couldn't be simpler. I really believe food shouldn't be complicated or take forever; you should cook with joy, because if it's a chore, where's the fun in it? And if something's made without joy, it gets eaten without pleasure too.

  • The batter for these apple pancakes comes together in a flash — the most work you'll do is sifting the flour and grating the apples. So here's how: grab a mixer and a deep bowl, preferably ceramic or glass. Crack the eggs into it and beat with the mixer; while beating, add the salt, sugar, and milk. Lower the mixer speed and start adding the sifted flour. Grate the apples on a coarse grater and — voilà — stir them into the batter. Sweet, not-too-juicy apples work best; if they release a lot of juice, add a bit more flour. Stir again. Add the vegetable oil to the batter so it won't stick to the pan, then cook. Fold the finished apple pancakes in half or even in quarters, dust with powdered sugar, and serve.
