  • Here's how it goes. Melt the butter in a skillet, finely chop the onion, add it to the butter, and sauté for 8–10 minutes, then scrape it into a bowl. Crumble the bread and add it to the ground beef. Crack in the egg and add the spices and the sautéed onion. Here's the spice mix I like: 1 teaspoon salt, 1/4 teaspoon ground black pepper, and 1/4 teaspoon ground nutmeg. Mix everything well — the meat mixture is ready. Roll it into balls about the size of meatballs, 1 1/2 to 2 inches (4–5 cm) across. Instead of poaching them, fry the meatballs in vegetable oil until nicely browned. Set them in a bowl and dust with flour. Meanwhile, stir the broth and cream together in the skillet, then return the meatballs and simmer them in the sauce for about 10 minutes. Serve with potatoes, spooning the creamy broth sauce over the top. Enjoy!
