Thai-Style Chili Chicken

  • I toast the rice in a saucepan for about ten minutes, shaking the pan often. The grains should turn golden. Let it cool, then grind it to a powder in an old coffee grinder. Heat that same saucepan with the vegetable oil and fry the chili peppers and garlic. A couple of minutes is enough — just watch until they soften.
  • Then it's time to add the store-bought ground chicken and cook over moderate heat, stirring constantly. Little by little the meat loses its pink color and turns golden. Once it does, I add the toasted rice powder, the beans, and the sauces: soy, oyster, and fish. Another three minutes over low heat with constant, vigorous stirring, and the dish is done. I slice green onions into thin rings and scatter them over the chili chicken on the serving plate. When a friend passed this recipe along to me, I could hardly believe such a simple dish belonged to Thai cuisine, famous for how exotic it is. It's wonderful any time of year and wins over even people who aren't usually keen on unfamiliar food. I make it most often in summer, when green onions are plentiful; in winter I use onion greens I grow on the windowsill instead.
