  • Rinse the chicken and cut it into pieces. Pour olive oil into a skillet, heat it, then lower the heat and gently fry the chicken breasts and legs in the oil over low heat. Peel the onion, rinse it under running water, and slice it into half-moons. Chop the ham finely; rinse the fresh mushrooms and cut each into four equal pieces crosswise. Rinse and chop the fresh herbs. Once the chicken is browned, add the finely chopped onion, the cooked chopped ham, the mushrooms, and the fragrant chopped herbs. Sauté for 4–5 minutes over low heat, then pour in the broth and let it come to a simmer. Add the finely chopped tomatoes, season with salt, and simmer for 10–15 minutes until the meat is tender. Serve the chicken on its own or with a side of homemade noodles tossed in butter, along with some fresh vegetables.
