- Here's a colorful, light appetizer — a simple salad with a fragrant dressing and Scottish salmon. You can prep the components of this "salmon with honey dressing" ahead of time and toss it all together in just a couple of minutes right before your guests arrive. What I do in advance: pan-fry the salmon in oil, skinned-side down, for 12–15 minutes, flipping it only once. It should cook all the way through and look opaque inside. Now the dressing: blend the oil, honey, mustard, mayonnaise, vinegar, pepper, and salt in a blender. Working over a plate so you don't lose any juice, separate the peeled oranges into segments, remove the membranes, cover them, and set them in a cool place. Stir the collected orange juice into the dressing, pour it into a bottle, and seal it. Slice the onion into half-moons, put it in a bag, and refrigerate. Flake the salmon into large pieces with a couple of forks and drizzle it with half the dressing; cover with plastic wrap and refrigerate. Guests at the door? Time to move: put the shrimp and orange segments in a large bowl and pour over the dressing (shake it first). Add the lettuce leaves and transfer everything to a platter. Top with the peppered salmon. The salad is ready to serve. By the way, it's also excellent made with smoked salmon if you'd rather not deal with fresh fish — just arrange the smoked salmon on one side of the platter and the salad on the other. Enjoy!
