Okinawa Doughnuts with Condensed Milk

Hawaii's sweet tooths can't get enough of these! Anyone can fry up a piece of dough, but these Okinawan doughnuts (andagi) are something else entirely. They caught on across the Hawaiian Islands, where folks devour them by the handful — even though the recipe was first brought over by Japanese immigrants long ago.

  • Combine the flour with the baking powder and sugar, mixing until the blend is as even as possible. Finely grate the orange zest. In a separate bowl, mix the eggs, condensed milk, butter, and orange zest, and let that sit for about half an hour. After 30 minutes, combine the contents of both bowls and knead into a dough. Heat the oil in a deep pot. To shape a doughnut, scoop some dough into your hand, close your fingers around it, turn your palm over, and squeeze your fist so a ball of dough presses up between your thumb and index finger. Fry each doughnut in the oil for a few minutes, turning constantly. When the ball is golden and has split open, it's done. Set the finished doughnuts on a paper towel to drain off the excess oil.
