  • Shrimp is a wonderfully versatile ingredient — you can serve it on its own, alongside a side dish, or tossed into a salad. Here's one more way to enjoy it: battered shrimp and potato bites. Separate the eggs into yolks and whites. Stir the flour and water into the yolks until smooth. Rinse and peel the shrimp. Beat the whites to soft peaks. Dust each shrimp with flour, dip it in the beaten whites, then in the batter. Sandwich each shrimp between two slices of potato, lower the little stacks into hot (bubbling) oil, and fry until golden. Arrange the finished shrimp and potatoes on a platter and garnish with fresh herbs if you like. For a bolder flavor, drizzle on a little soy sauce — but go easy, or it'll overwhelm the dish. It's quick and simple, yet really tasty! You can make it for dinner, though it's best as a hearty midday main. It isn't exactly light fare, so if you're watching your calories, this one probably isn't for you.
