- Baked lamb ribs are the kind of dish that dresses up any special-occasion table with ease. For anyone who loves lamb, this rack is a real find. The combination of tender lamb ribs with rosemary and potatoes delivers a wonderful flavor and aroma that will please any food lover. Cut the ribs into portions about 4 by 4 inches (10 by 10 cm) and pound them well with a meat mallet. Season each piece with pepper, salt, and rosemary. Now turn to the potatoes: peel them and cut into small pieces. Arrange the potatoes in an oiled skillet and fry until tender along with the mushrooms. You can use whole frozen mushrooms or canned sliced ones to save time. While the potatoes fry, prep the cheese and garlic — grate the parmesan on a fine grater and press the garlic.
