- Welsh-style cheese-and-beer toasts are one of the best-known dishes in the British repertoire. Grate the cheese on the coarse side of a box grater. Set up a double boiler: fill a saucepan partway with water and bring it to a simmer, then set a smaller pan on top and add the grated cheese. Stir the cheese constantly as it melts, gradually pouring in the beer. Separately, beat the egg yolk (with a mixer or by hand) together with salt, pepper to taste, and the mustard, then stir this into the cheese. Keep stirring until the mixture is smooth. Take the pans off the heat and start on the toast. Toast the bread in a toaster, arrange the slices on a baking sheet, and spread a thick layer of the cheese mixture over each one. Bake in an oven preheated to 350°F (180°C) for 5–7 minutes. As soon as the toasts turn golden, pull them from the oven. This recipe makes about 6 servings, so divide the toasts among 6 plates and serve them hot. Start to finish, these hearty cheese toasts take about 40–50 minutes. They make a terrific snack with beer or other drinks. Enjoy!
