Fried eggplant with tomato turret

Classic recipe for a mother-in-law's tongue snack! The food I eat can be safely divided into 2 categories: delicious and damn, now I'm going to die in the gym again tomorrow :) This dish is just from the second series. A delicious, simple and quick snack will appeal to lovers of spicy :)
