Cooking method
- Break the cauliflower into florets, rinse, and boil in salted water. Cook for just 3–4 minutes so the cauliflower stays firm and slightly underdone (don't overcook it — that's the key). Drain in a colander and let the water run off. Beat a couple of eggs well, add the cauliflower, and toss to coat thoroughly. Working in batches, roll the pieces in a plate of breadcrumbs and lay them in a hot, oiled skillet. Fry until done, 5–7 minutes. The cauliflower comes out firm and tastes just like mushrooms.
