  • Peel the potatoes and cut them into thin strips. Drop them into a bowl of cold water and let them soak for 3–5 minutes. Lay the potatoes on a paper towel and blot the tops with another towel so no water is left on the strips. First fry the potatoes in vegetable oil on both sides until golden, then transfer them to a paper towel and let the excess oil drain off. Once the potatoes have dried a bit, return them to the skillet with the oil and fry for another 5 minutes. You'll end up with golden, delicious fries — enjoy!
