Milk Crepes with Apple, Vanilla, and Raisins
Thin crepes with a sweet fruit filling. These milk crepes with apple filling are made from a simple crepe batter with a splash of boiling water added. They're cooked thin, so the filling wraps up easily. The apple filling comes together quickly and simply - you can add orange or lemon zest if you like. Both grown-ups and kids love these crepes. Serve them with tea, coffee, or milk.

Step 1:
Here are the ingredients for the crepes. Use a sweetener that holds up to heat. You can also use sugar instead (about 60 grams / 1/4 cup).

Beat the eggs with a whisk or mixer. Add salt and sweetener to taste.

Sift in the flour mixed with the baking soda.

Pour in the warm milk and mix thoroughly.

Whisk into a smooth, lump-free batter.

Pour in the boiling water and mix. You should have a thin, pourable crepe batter. Adjust the sweetness and salt if needed (taste it and add whatever it's missing).

Add the vegetable oil and mix. Let the batter rest for 20 to 30 minutes.

Meanwhile, make the filling. Here are the ingredients for it.

Peel and core the apples and cut them into small dice.

Melt the butter in a skillet and add the sugar. Over medium heat, stirring constantly, cook until it turns a caramel color. You can skip the sugar here, especially if your apples and raisins are sweet, or use the same sweetener in the filling.

Add the diced apples and the rinsed, plumped raisins, and cook until the apples are soft and the moisture has cooked off.

At the end, add a pinch of vanillin (or a splash of vanilla extract) and stir. Cook for another 1 to 2 minutes. The apple filling is ready.

Cook the crepes in a well-heated skillet until golden on both sides.
