Egg-and-Cheese Fried Toasts with Parsley
Tender, fragrant toasts that come together quickly! These egg-and-cheese toasts with parsley are pan-fried in vegetable oil. You can even use unrefined sunflower oil for a pleasant, nutty flavor. You'll need a hard cheese, grated on the fine side of a box grater. That, along with the herbs, gets mixed into beaten egg, and slices of baguette or white bread are dipped into the mixture. The toasts are fried on both sides until golden. Serve them warm, with soup or a cup of tea.

Cooking method
-
Step 1:
- Gather all the ingredients for the toasts. The cheese can be store-bought or homemade — what matters is that it grates and melts well. If you prefer, use white bread instead of a baguette.
-
Step 2:
- With a sharp knife, cut the baguette into slices of even thickness, about 1/2 inch (1 cm). Then cut each slice in half, or leave them whole.
-
Step 3:
- Crack the eggs into a deep dish. Add salt and ground black pepper and whisk together. You can also add a fragrant seasoning blend — a chicken or vegetable one, for example.
-
Step 4:
- Pour cold milk into the egg mixture and stir until smooth.
-
Step 5:
- Rinse the parsley. Finely chop the sprigs with a knife, add them to the mixture, and stir.
-
Step 6:
- Grate the cheese on the fine side of a box grater and add it to the mixture. Whisk everything together — you now have a cheese-and-egg batter for the toasts.
-
Step 7:
- Dip the baguette slices into the batter.
-
Step 8:
- Pour vegetable oil into a preheated skillet. After a minute, lay out the toasts. They fry very quickly over medium heat.
-
Step 9:
- After about a minute, flip the toasts and fry the other side until golden. Transfer the hot toasts to a plate, let them cool slightly, and serve with a soup like pickle soup or borscht, or simply with a drink of your choice. Enjoy!
- These tasty toasts are a great way to use up a stale baguette or bread. If the toasts come off the pan with a lot of oil, set them on a paper towel for about 3 minutes. You can use dill instead of parsley in the batter, and frozen herbs work fine too.
