Egg-and-Cheese Fried Toasts with Parsley

Tender, fragrant toasts that come together quickly! These egg-and-cheese toasts with parsley are pan-fried in vegetable oil. You can even use unrefined sunflower oil for a pleasant, nutty flavor. You'll need a hard cheese, grated on the fine side of a box grater. That, along with the herbs, gets mixed into beaten egg, and slices of baguette or white bread are dipped into the mixture. The toasts are fried on both sides until golden. Serve them warm, with soup or a cup of tea.

  • These tasty toasts are a great way to use up a stale baguette or bread. If the toasts come off the pan with a lot of oil, set them on a paper towel for about 3 minutes. You can use dill instead of parsley in the batter, and frozen herbs work fine too.
