Zesty Cabbage Patties with Semolina

Finely shred about 2 lb (1 kg) of green cabbage.

Put the shredded cabbage into a dry skillet on the stove and season with salt to taste.

Cover and cook the cabbage over high heat for about 7 minutes, stirring now and then, then pour in 150 ml of cream or milk.

Add 1 tablespoon of butter and stir everything together well.

Cover and keep cooking the cabbage for another 7 minutes, remembering to stir now and then.

Add a third of a teaspoon each of nutmeg, the red-and-black pepper blend, and coriander to the cabbage, along with half a teaspoon of paprika.

Add 110 g of semolina to the bowl.

Mix everything together well and set the bowl aside for 20–30 minutes to let the semolina swell.

After it's rested, stir everything again and shape into patties.

Dredge the shaped patties in breadcrumbs and neaten up their shape.

Add the patties to a skillet heated with 2 tablespoons of vegetable oil and fry them until golden on one side.

Flip the patties, cover the pan, and fry for another 3–4 minutes, until cooked through.

To make the sauce, combine sour cream, chopped herbs, pressed garlic, salt, and the black-and-red pepper blend in a bowl to taste, and stir until smooth.
