Pumpkin Fritters with Milk
Pumpkin fritters will fill your home with the bright aroma of summer! My beloved grandmother has a big family — five children, six grandchildren, and already four little great-granddaughters. In the summer, the whole crowd of us usually comes to stay with her in the village for our vacations. You always want to feed the people you love something extra tasty, and with that many hungry mouths, the food has to be quick and easy. So Grandma always fried up an unbelievable amount of these insanely good pumpkin fritters, and they'd vanish in a flash! These aren't just any fritters — they're golden. And I mean truly golden, because they're made from sunny pumpkin! This masterpiece of Grandma's was always a hit with the older generation and the little ones alike.
Cooking method
- To recreate grandma's recipe, you'll need: 2 lb (1 kg) of pumpkin, 1 cup of pancake flour (or all-purpose flour), 1/2 cup of milk, 2 to 3 eggs, 1 tablespoon of sugar, salt to taste, and fat for frying. Well, let's get started! Peel the fresh, fragrant pumpkin and grate it on the fine holes of a grater. Into the bright orange mixture, add the flour, crack in the eggs, add the sugar, and add a pinch of salt. Then mix it all thoroughly. Now for the key moment: the batter needs to be smooth and lump-free. To get there, warm the milk to about 105–120°F (40–50°C) and pour it gently into the batter, stirring briskly the whole time. All set? Great! Now heat the vegetable oil in a cast-iron skillet, and use a wooden spoon to drop the batter into neat little fritters. Fry these little suns on both sides. That appetizing golden crust and incredible aroma make it easy to tell when this tasty, wholesome treat is done. Pumpkin fritters are best served hot off the stove with sour cream or butter. Enjoy!
