    How do you make chicken breast with bell pepper? First, gather the ingredients. If the meat is frozen, thaw it ahead of time, then rinse and pat it thoroughly dry. Wash the vegetables too, and remove the peels, seeds, and stems. Use peppers of different colors to make the dish look brighter and more appetizing.

    Take the chicken off the bone if needed (or just buy boneless fillets). Remove the skin.

    Cut the chicken into cubes.

    Put the chicken in a bowl and sprinkle with curry powder. Add salt and pepper. Stir and let it sit for at least 10 minutes.

    Slice the peeled onion into thin half-moons.

    Cut the bell peppers into strips. Mine are two colors, red and yellow — you could also use orange or green.

    Squeeze the juice from a fresh orange. You can use bottled juice instead, but only if it's unsweetened.

    Heat vegetable oil in a skillet. Sauté the onion until it just starts to change color — I fry it for about five minutes.

    Add the chicken to the pan. Sauté for 3 to 5 minutes, stirring.

    Pour the orange juice over the chicken. Start simmering the meat over low heat, stirring. This will take at least 15 minutes.

    Stir. Cook until done, to your taste. If you want the chicken browned, give it time to fry well before adding the peppers. If you want a bit of sauce, pour in some water. For extra flavor, add minced garlic 5 minutes before the end of cooking.

    Done! Garnish the finished chicken and bell pepper with fresh herbs and serve.

  • Easy to make, and the chicken, pepper, and orange all go together perfectly! I'm not a huge fan of chicken breast, since it's a bit dry for my taste. But chicken breast with bell pepper is a pretty tasty dish, and the dryness disappears.
  • You can swap the chicken for turkey or any other meat you like. Just keep in mind that the cooking time and calorie count will change.
  • To keep your eyes from watering when you slice onions, rinse the onion and the knife in cold water. Your cutting board won't hold the onion smell if you rub it with a slice of lemon before cutting.
