Balkar Khychiny (Stuffed Flatbreads) with Potato and Cheese
Make these thin flatbreads with a savory filling for dinner! We had Balkar khychiny last night. I like mine with ketchup and sour cream, the kids dip theirs in their favorite sauce, and my husband goes for something spicy. However you serve them, these flatbreads are a treat!

- Make the filling: peel the potatoes, wash them, cut into large pieces, and boil until tender. Mash the cooked potatoes. Grate the cheese and add it to the potatoes. Finely chop the green onions and add them too. Season with salt and pepper, mix thoroughly, and the filling is ready. Now make the dough: pour the kefir into a bowl, add the baking soda, and let it sit for 5 minutes. Pour in the water, add salt, and work in the flour a little at a time, kneading well. The dough should be soft and pliable. Cover it with a clean cloth and let it rest for 25–35 minutes. Divide the dough into 7 equal pieces and shape each into a round. Place filling in the center, gather the edges up into a "pouch," then roll it out with a rolling pin (or press by hand) into a flatbread. The filled flatbread should be thin, about ⅛–¼ inch (3–5 mm). Fry the khychiny, covered, on both sides until golden. Brush the finished khychiny with melted butter. Enjoy!
