Chepalgash on kefir with cottage cheese and green onions

Very tasty tortillas for breakfast with sour cream and hot, fragrant tea. Tender tortillas stuffed with fresh homemade cottage cheese. This is a dish of our national cuisine. Tortillas are baked in a dry, heated frying pan without oil.

Knead the dough:
Sift flour into a large cup, make a funnel and pour 1 tsp salt.

Cover the dough with a towel and leave to rest for 20 minutes.

Let's do the filling:
Grind the cottage cheese, a pinch of salt and finely chopped green onions (the more onions, the tastier the filling) mix everything together.
Preparation:
Divide the dough into small balls of 8-9 pieces.Flatten to 1 cm thick.
Put 2 tablespoons of filling in the middle.
Pinch the edges with a knot over the filling, forming a ball with a filling inside, press the ball with the filling with your fingers and roll out with a rolling pin, shake off the flour gently (if the dough breaks, it's okay) and put it on a dry, heated frying pan, bake on both sides and remove to a plate, put a new raw one in its place if there are grains of burnt flour left in the pan after the tortilla, we calculate it with folded two paper towels (these 2 napkins will last until the end of the whole process) and at the same time, taking a piece of butter with a fork, we smear the hot cake on both sides that is on the plate (do not spare the oil), repeat this until the last cake is baked. Cut the finished tortillas into segments.
Serve hot with sour cream and fragrant black tea. Tortillas after smearing with oil, turn out to be very soft and tender, it's a pleasure to eat. Bon Appetit!
