Chepalgash — Cottage Cheese Flatbreads

Wonderful breakfast flatbreads to enjoy with sour cream and a cup of hot, fragrant tea. Tender flatbreads filled with fresh homemade cottage cheese—a dish from our regional cuisine (a Chechen and Ingush classic). They're cooked on a dry, hot skillet with no oil.

  • Make the dough: Sift the flour into a large bowl, make a well, and add 1 tsp of salt. Stir 1 tsp of baking soda into the warm soured milk, then pour it into the flour and knead a soft dough by hand. Cover with a towel and let it rest for about 20 minutes. Make the filling: Mash the cottage cheese, then mix in a pinch of salt and plenty of finely chopped green onions (the more onion, the tastier). To assemble: Divide the dough into 8–9 small balls. Flatten each to about ½ inch (1 cm) thick and place 2 tablespoons of filling in the center. Pinch the edges up over the filling to seal it into a ball, then press it flat with your fingers and roll it out with a rolling pin. Gently brush off the excess flour (it's fine if the dough tears a little) and place it on a dry, hot skillet. Cook on both sides, then move it to a plate and start the next raw one. If bits of scorched flour are left in the pan, wipe it out with two folded paper towels (the same two will last the whole batch). Meanwhile, use a fork to rub butter over both sides of the hot flatbread on the plate—don't be stingy with it. Repeat until the last one is done. Cut the finished flatbreads into wedges and serve hot with sour cream and fragrant black tea. Buttered this way, they come out soft and tender—a real pleasure to eat. Enjoy!
